You need to fuel your mornings, but don’t always have the time to make a well balanced breakfast. That’s where these egg bites come in! They can be prepped at the start of the week and reheated quickly in the morning as you’re running out the door and starting your work.
The veggies sautéed in our Olive Oil Submarine Dressing are what give these bites their full flavor.
Ingredients:
- 10 large eggs
- 1 – 1 1/2 teaspoons sea salt, or to taste
- 1/4 – 1/2 teaspoon black pepper, or to taste
- 2 tbsp. Beano’s Olive Oil Submarine Dressing
- 1 cup chopped spinach
- 1/2 cup chopped mushrooms
- 1 red pepper, chopped
Directions:
- Place cupcake wrappers in a muffin tin, or grease with non stick spray
- Preheat oven to 400 degrees
- In a skillet, pour the Olive Oil Submarine dressing and let heat up
- Add the mushrooms and red pepper and sauté for 5 minutes or until tender
- While the mushrooms and peppers are cooking, crack eggs into a bowl and whisk. Add in the salt and pepper
- Once veggies are cooked evenly divide them into the 10 muffin tins
- Add the spinach evenly and stir to combine
- Place eggs in the oven and bake for 12-15 minutes (or until eggs reach desired consistency)
- Once cooled, store egg bites in container in the refrigerator for up to a week, reheat when needed.
