Buffalo Chicken & Bacon Grilled Cheese

There are few things that scream comfort food more than grilled cheese. It’s a childhood staple, but we’re all for giving it a grown-up twist. 

This time around we added Buffalo Chicken, made with our Buffalo Sandwich Sauce, and bacon for a spicy, salty mix to a classic.

Ingredients:

  • 8 slices bacon, cooked
  • ¾ cup Beano’s Buffalo Sandwich Sauce
  • 1½ cups shredded rotisserie chicken
  • sea salt, to taste
  • fresh black pepper, to taste
  • 8 slices sourdough bread
  • 8-16 thin cheddar cheese slices
  • butter

Directions:

  1. In a large bowl, mix the shredded chicken with the Buffalo sandwich sauce. Toss until the chicken is evenly coated.
  2. Butter one side of each slice of bread and then lay the butter side down. Start layering the cheese, the chicken, and then the bacon on 4 of the slices. 
  3. On the other 4 drizzle more Buffalo sandwich sauce, and then add more slices of cheese.
  4. Top the chicken slices, with the sauce slices
  5. Heat up a skillet and add sandwiches, one at a time. Heat on both sides until crispy and golden brown.
  6. Remove from skillet and enjoy!
