Chicken Salad Sandwich

Who says a chicken salad sandwich has to be basic? We’re elevating the game with Beano’s Honey Mustard, diced chicken, and a medley of dried cherries and apples!  Toasted buns with olive oil provide the perfect crunch, while a sprinkle of arugula adds that gourmet touch. This is the sandwich you didn’t know you needed!

Ingredients:

  • Diced chicken (2 cups)
  • Beano’s Honey Mustard (1/4 cup)
  • Mayonnaise (1/4 cup)
  • Salt (to taste)
  • Pepper (to taste)
  • Dried cherries (1/4 cup)
  • Diced apples (1/4 cup)
  • Dill (1 tsp)
  • Buns (2)
  • Olive oil (for toasting)
  • Arugula (for garnish

Directions:

  1. In a mixing bowl, combine diced chicken, Beano’s Honey Mustard, mayonnaise, salt, and pepper. Mix well.
  2. Add in dried cherries, diced apples, and dill. Stir until well incorporated.
  3. Preheat a skillet over medium heat. Brush buns with olive oil and toast until golden brown.
  4. Assemble the sandwich by placing a generous amount of chicken salad on the toasted bun.
  5. Top with a handful of arugula for that gourmet touch.
  6. Serve immediately and enjoy your flavor-packed lunch!
