Southwest Loaded Nachos

Ingredients:

For the Nachos:

  • 1 tablespoon extra-virgin olive oil
  • 1 large onion, chopped
  • 1 pound ground beef
  • 2 garlic cloves, minced
  • 1 tablespoon taco seasoning
  • 1 (15-ounce) can of refried beans
  • 1/4 cup water
  • 1 large bag tortilla chips
  • 4 cups of shredded Mexican blend cheese
  • 1 (15-ounce) can black beans, drained
  • 1/2 cup pickled jalapeños

For the Toppings:

  • 1 large tomato, diced
  • 1 avocado, diced
  • 1/4 cup thinly sliced green onions
  • 1/4 cup fresh cilantro leaves (optional)
  • Sour cream, for drizzling
  • Beano’s Southwest Sandwich Sauce, for drizzling

Directions:

1. Preheat your oven to 425ºF and line a large baking sheet with aluminum foil. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the ground beef and continue cooking until no longer pink, approximately 6 minutes. Drain any excess fat.

2. Stir in the minced garlic and taco seasoning, then season with salt. Continue cooking until the meat is well-browned and slightly crispy, about 5 more minutes. Add the refried beans and water to the skillet, mixing until combined.

3. Arrange half of the tortilla chips on the prepared baking sheet. Layer with half of the beef-bean mixture, followed by half of the cheese, half of the black beans, and half of the pickled jalapeños. Repeat these layers one more time.

4. Bake the nachos in the preheated oven until the cheese is melted and bubbly, approximately 15 minutes.

5. Remove the nachos from the oven and top with diced tomatoes, avocado, sliced green onions, and cilantro (if using). Drizzle with sour cream and Beano’s Southwest Sandwich Sauce, then serve immediately.
