Sweet Potato and Kale Grilled Cheese

This isn’t your average grilled cheese. We added sweet potatoes roasted with Beano’s White Pizza Sauce with Oregano, caramelized onions, and kale to make a tasty twist on the classic grilled cheese. 

Ingredients:

  • 1 medium sweet potato, sliced
  • 2 tbsp of Beano’s White Pizza Sauce with Oregano
  • 1/2 red onion, sliced
  • 2 tbsps of butter
  • 2 slices of whole grain bread
  • 2 large slices of mozzarella cheese
  • handful of kale
  • salt and pepper to taste

Directions:

1. Preheat the oven to 400 degrees. In a bowl add the sweet potatoes and add Beano’s White Pizza Sauce with Oregano and mix. Place the sweet potatoes on a baking sheet and roast for 20-25 mins or until tender. Once they are done, set them aside.
2. While waiting for the sweet potatoes to roast, they start caramelizing the onions. In a small pan set to medium heat, add 1 tbsp of olive oil and add the onions. Add a pinch of salt and stir occasionally. Once they are finished, set them aside to cool.
3. In the same saucepan, add 2 tbsps of butter and cook until the butter is brown in color while stirring occasionally. In a small bowl, let the butter cool to room temperature.
4. Turn on your griddle or heat a large skillet to medium heat. Take the two pieces of bread and butter on each side. Next, add the cheese, a layer of sweet potatoes, kale, caramelized onions, and add a little bit more of Beano’s White Pizza Sauce with Oregano. Top with a slice of bread, butter side up.
5. Place the sandwich on the griddle or skillet, butter side down. Grill until the bread is golden brown and flip. Once the cheese is melted, add it to a plate and serve! Enjoy!
