Southwest Breakfast Burrito

Southwest Breakfast Burritos are one of our favorite make ahead breakfasts! Make these ahead of time and store in the refrigerator or freezer. Then just pop in the microwave and enjoy a filling and flavorful breakfast!

To make these breakfast burritos you’ll need breakfast sausage, white rice, black beans, red onion, a bell pepper, and Beano’s Southwest Sandwich Sauce.

Ingredients:

  • 4 eggs
  • 1 tbsp olive oil
  • 4-6 ounces ground breakfast sausage
  • 1/4 cup canned black beans
  • 1/4 cup red onion, diced
  • 1/4 cup red bell pepper, diced
  • 1 cup Pepper Jack or Cheddar cheese, grated
  • Beano’s Southwest Sandwich Sauce
  • 4 large tortillas

Makes 4 burritos

Directions:

  1. Boil water and cook 1/2 cup white rice according to packaging
  2. Crack eggs into small bowl, and whisk. Warm olive oil in frying pan and pour eggs in and scramble until cooked. Then transfer to bowl.
  3. In the same pan, brown sausage and cook onion.
  4. Warm flour tortillas in microwave for 20 seconds. Arrange scrambled eggs, black beans, sausage, rice, onion, bell pepper, and cheese in the center of tortilla, drizzle Southwest Sandwich Sauce over top, then fold and roll until sealed.
